Hi I’m Hayley Mielnicki! I am a recent graduate of Johnson and Wales University, earning my degree in culinary nutrition with a concentration in dietetics in 2017. I was attracted to the field of dietetics because of my passion for cooking, and was inspired by having grown up in a family that valued healthy eating and that supported local agriculture in my hometown of Saquoit, NY.
Having briefly entertained the idea of opening a restaurant, I fell into nutrition after realizing the important role that food, particularly the enjoyment of local, seasonal, and fresh food, can play in a healthy lifestyle. I am currently a Dietetic Intern at Syracuse University. Someday, I hope to be able to incorporate cooking lessons into my professional path, possibly incorporating them into a private dietetics practice. My larger goal is to show that good nutrition is easy, affordable, and attainable.
The recipes on HealthbyHayl are created to fuel each and every body, catering to any substitutions that are needed. So, feel free to mix and match, eyeball some measurements and get messy (because you know I did!).
