Yield: 9-12 bars
Ingredients:
Wet-
1/4 cup maple syrup or honey
1 egg (1 flax egg also works)
1/2 cup milk (dairy or non-dairy)
1/2 cup carrots, shredded
1 tsp vanilla extract
Dry-
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup raisins
1/4 cup walnuts
1/4 cup shredded coconut
1 1/4 cup oats
1/2 tsp baking powder
Directions:
- Preheat oven to 350 degrees F. In a large bowl mix together all of the wet ingredients until well combined.
- Add in the dry ingredients and fold together. Mix until fully incorporated.
- Pour the mixture into a greased 8×8 pan or muffin tin and bake for 20-25 minutes or until the top is lightly browned.
- Cool then slice into squares. I like to serve mine with a drizzle of maple syrup and some berries!
