1 cup oats
1/2 cup milk (dairy or non-dairy)
2 Tbsp powdered peanut butter (or regular peanut butter)
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/2 tsp vanilla
- Blend all ingredients together in a blender or food processor until smooth (1-2 minutes).
- Heat a greased skillet over medium heat. Pour 1/4 cup sized circles of batter into the pan, about 2 inches apart. Cook 2-3 minutes or until small bubbles appear, flip and cook an additional 2-3 minutes.
- Top with fresh fruit, peanut butter and a drizzle of maple syrup or honey!
